Martelli has been producing pasta since 1926 in his pasta factory in Lari, in the center of the Pisan hills, in Tuscany. All stages of the work are carried out by the members of the Martelli family in a way that preserves the grandfather's inspirational passion, tradition and quality. Pasta-making among the smallest in Italy can take advantage of the "traditional" application for the working methods followed. The best Italian hard wheat groats are picked and slowly mixed with cold water;  circular bronze dies are used and dried for about 50 hours at low temperatures (no more than 36 °) in today's historic Giorgetti dryers, where the dough is valorized in all its features. This  pasta is created in which the taste of the grain is clearly perceived, with good baking properties and that, thanks to its exceptional porosity, it allows to bond with any condiment. Spaghetti for good grain flavor, excellent condensation absorption, and good baking properties are excellent for all sauces. You can cook amatrician, pesto or even pudding.
